I am interested in using this down time to try to learn about investing in a bit more detail. Can anyone point me in the direction of any good courses?
I would like to be able to understand the various investing terms and ratios better and maybe learn how to read accounts and statements better.

If you want to start with accounts, statements, and from there factors then why don't you start with the courses run by Graham Neary's company, Cube.Investments? Combine their course materials (see: https://cube.investments/produ...) with the Stockopedia online materials?

If you have a close look at some of the Guru strategies there is a great deal of information on what ratios they use and why, and good explanation of investment terms. Also the Stockopedia glossary is as good a starting place as anywhere.
